Vegetable korma

Vegetable korma/Kurma is a coconut based gravy made with boiled mixed veggies and blend of aromatic spices..a must have with kerala style flaky Parotta. There are two methods for making this gravy, Either with coconut or with coconut milk whatever available. This recepi is done with fresh coconut


Ingredients:
2 cups mixed vegetables boiled with minimum water or steamed.(Potaoes, carrots, cauliflower, beans and peas)

1 tbs oil
1 tsp mustard seeds
10-12 curry leaves
2-3 green chilli slitted lengthwise
1 tsp ginger garlic paste
2 onion chopped
2 tomatos chopped
salt as per taste
1 tsp sambar powder
1 tsp garam masala
coriender leaves for garnishing
for paste:
1/2 cup fresh coconut
1 piece cinnamon
2 cardomom
2 tsp poppy seeds white
3-4 cloves
2 garlic clove
1 tsp funnel seeds
1/2 tsp fenugreek seeds


Make paste by adding water and keeps aside
Method:
Heat oil in a pan and add musturd seeds..once splutter add curry leaves and green chilli.
After few seconds add u chopped onions and fry until light brown.
 Add Ginger garlic paste and fry for 30 seconds.
Add chopped tomatoes and cook until tender and mashes. add sambar powder and mix well, cook for a minute.

add boiled veggies and coconut paste. Adjust the consistency and salt. 



Boil for 3-4 mins on sim, switch of gas add garam masala and garnish with corinder leaves.


serve hot with roti, parata or kerala style parotta.
