Bhature recepi

Chole Bhature: one of the yummiest street food of north india..These perfectly puffed up bhaturas when served with tangy spicy chole.. just yummm..who cares about calories then :)



Ingredients;
plain flour 2 cups
suji 1/4 cup
yogurt 1/4 cup
oil 2 tbs
salt 1/2 tsp
baking soda pinch
1/2 tsp sugar
lukewarm water
oil yo fry

Method:
Sift flour and suji together. in a bowl mix yogurt, oil, salt, sugar, baking soda and add this mixture to flour. Mix very well with flour. now with the help of lukewarm water knead soft dough of roti consistency. Knead well for 3-5 mins. Kneading is the key to soft and flufy bhaturas. apply some oil on flour.
Leave dough covered with kitchen towel for 2 hours in a warm place.
After 2 hours knead again for a minute. Heat oil in a deep frying pan. Pinch a ball of dough and roll in like puri but bit thicker than poori and slightly bigger. You can make round or oval shape. Fry and press slightly with ladder to make them pluffy.


oil should be nicely hot for frying otherwise bhaturas wont puff up and become bit hard.
there should be enough oil, fry 1 bhatura in 1 time. serve hot with chole.

Bread pizza cups

Easy peasy tasty healthy and hasselfree..when you want to have pizza but did not make dough.



Ingredients:
Finely chopped veggies of your choice( Red, green and yellow bell peppers, onion, tomato, corn, olives, mushroom)
salt and black pepper
dried oregano
grated mozerella cheese
Bread slices 

Method:
Add salt and pepper to finely cut veggies and preheat the oven at 200C


slightly cut the sides of bread if brown part is very thick



Roll slightly with rolling pin



Adjust in a muffin pan



Fill with veggies.



put in oven for 7 mins.


Add grated cheese on top.


Again put in oven untill becomes beown on top



Your bread pizza cups are ready.

Tomato Chutney




Ingredients
2 tsp oil
2 medium tomatos chopped
1 onion chopped( optional) see note at the end
2 whole red chillis
1/2 tsp tamarind paste
salt as per taste
Tempering
1 tsp oil
1 tsp mustard seed
few curry leaves
pinch heeng
Method
Take oil in pan.
Add chopped onion, cook till slightly cooked. do not brown them.
Add chopped tomato and cook till nicely cooked. You dont want raw smell of tomatoes.
Add red chillies and tamarind paste, cook for 2 mins and switch off gas let it cool completely
grind to a smooth paste.
adjust salt.
For heat oil for tempering add musterd seeds, once cracked add curry leaves, whole red chilli and heeng.
Temper over chutney
Serve with Doda Udly Vada or Upma.

Note: This chutney can be made without onion just skip adding onion and add 3 tomatoes instead of 2.

Coconut chutney

Coconut chutney is a part of south indian cuisine and essentially served with Dosa, Idly, Vada or Upma 



Ingredients:
For Grinding
1 cup fresh coconut grated or chopped
2 tbs roasted chana dal
10-12 curry leaves
2 green chillies
salt as per taste
Tempering
1 tsp oil
1/2 tsp musterd seeds
1/2 tsp urad dal
pinch heeng
few curry leaves
2 whole red chilli dry
Method: Take all ingredients for grinding and grind to a smooth paste with the help of water.
Now heat oil for tempering in a pan. Add mustard seeds, once done add urad daal cook until light brown. Add curry leaves, red chilli heeng and temper over chutney. serve with Dosa, Idly, Vada or Upma

Urad daal vade/Medu vada


Medu vada are made of Urad daal and an essential part of south indian cuisine. These vadas are crispy on outside and light aery and soft from inside



Ingredients:
1 cup urad daal soaked for at least 2-3 hours un enough water
1 tsp salt
1/2 tsp black pepper whole
2 medium sized onion finely chopped
2 green chillies finely chopped
10-15 curry leaves roughly chopped
oil to fry

Grind soaked urad daal without or very minimum amount of water to a smooth batter. Using less amount of water is a key to make crispy and less oily vadas.
Add green chillies, curry leaves and pepper and leave in fridge for 1/2 an hour.
It is good to add onion and salt just before frying as these things make batter little bit watery.
Now heat oil in a frying pan
Wet your clean and washed hand in clean water.



Take batter in hand and make a hole with thumb



carefully drop vada in oil. 



repeat process and make 4 vadas in one time. Do not over crowd the pan as it changes the shape of vadas.



Fry till golden brown. Take out on absorbent paper and serve hot with sambar and chutneys.

Aata ajwain jeera cookies

These melt in mouth cookies are sooo soft and yummy. Having very few basic ingredient from kitchen so easy to make and really healthy for kids.


 
Ajwain Jeera cookies
1 cup whole wheat flour
1/2 cup powdered sugar
3/4 tsp salt
1 tsp ajwain or carom seeds
1/2 tsp jeera or cumin seeds
1/2 tsp baking soda
½ cup ghee at room temperature
1 to 2 tsp milk if required

cream the ghee and powdered sugar with a hand held blender or in a food processor.the mixture should become smooth, light and creamy.add wholewheat flour, salt, ajwain, jeera and baking soda.mix well, gently knead to a smooth dough.add water or milk only if required dough looks dry.
pinch medium sized balls from the dough.roll them evenly in your palms.slightly flatten them and arrange in a baking tray. leave some space between cookies as they expand while baking.bake the cookies in a pre heated oven at 180 degrees C for 10-12 mins till light golden.remove and place them on wire racks.

Home made veg pizza

Saturday night menu is fixed sabka favorite PIZZA..sooo yummy sooo cheesy and taste of fresh veggies just awesome :( my 9 yr old stopped ordering pizza from outside since I started making pizza at home 😊😊



 Ingredients :Olive oil, for greasing Plain flour, for dusting
 3 cup plain flour
 2 teaspoons/ 7 gm sachet dried yeast
 1 1/2 teaspoons salt
1 tsp sugar
 11/4 cups lukewarm water
 1 tablespoon olive oil
Toppings as per your choice..
grated mozarella cheese.



Method
To make the pizza dough, place the plain flour and salt in a large bowl and mix well.
 In another bowl take lukewarm water sugar and yeast..mix well and leave for 10 mins.. mixture will become froathy.
Add olive oil to yeast mixture..Make a well in the centre of dry ingredients and add yeast mixture to the dry ingredients. Use a wooden spoon to stir until combined and then use your hands to bring the dough together in the bowl. It should be soft and slightly sticky. keep kneading well on a floured surface for 8-10 mins it is really important. 
Grease a bowl and keep you dough in bowl covered with damp tea towel in a warm place to prove. after 1 hr dough'll double in size.



Again knead dough well for 3-4 mins so that dough'll come in original size.



Preheat oven at 200 Cel..grease a pizza tray..divide the dough in 4 equal parts.
Roll one part in pizza, prick with fork several times.



Now bake the pizza base for about 8 mins till half baked..take out spread pizza sauce and very small amount of cheese.



 Now arrange toppings of your choice. veggies or meat pieces as per your taste.



 Add a generous amount of mozarella cheese..



again bake till the cheese bubbling and little bit brown on sides.,


take out pizza..cut in slices and enjoy :)

  
Note: you can add wholewheat flour and plain flour half half to make it healthier.

Pineapple sponge cake with whipped cream

  • This cake holds a special place in my heart as it is my very first celebration cake :)
  •  
  • ingredients:
  • Sponge 
  • eggs - 4
  • sugar powdered - 1cup
  • all purpose flour- 1cup
    corn flour- 2 tablespoon
    baking powder- 1tsp 
  • salt - 1 pinch 
  • vanilla essence - 1 tsp
  • Filling/Topping: 
  • whipping cream: 400 ml
  • icing sugar - 3-4 Tbsp 
  • mixed fruit Bits - 1 cup
  • fruits for decoration
  • Sugar syrup:
  • boil 1 cup water and 1 cup sugar for 1 minute after it start boiling.

Method:
  • Preheat oven to 190deg C , reduce to 180deg C after 10 mins of putting the cake in.
  • Grease and line a round 9 inch cake pan
  • Sift the flour + baking powder + salt + cornflour 3 times.
  • Beat the eggs and sugar well with beater for 10 minutes.
  • Add vanilla essence and and beat for 1 min.
  • Gently fold in the sifted flour.
  • Turn gently into tin and bake for 30-35mins till done.
  • Once done, remove from tin after 5 mins and leave on rack to cool completely. Cut horizontally into 3 layers.

  • Filling:
  • Whip whipping cream with 4tbs pwdrd sugar until thick and holds peaks.
  • Reserve 1/2 for icing the top.
  • In the remainder of the cream ,fold in the chopped fruit bits.
  • Place the bottom most layer of the sponge on your serving platter, put sugar syrup all over cake. do not put too much otherwise cake will become soggy. spread 1/2 of the whipped cream and bits mixture over it.

  • Place the middle layer over this, put sugar surup and repeat with the rest of the fruit cream.
  • cover the whole cake with some sugar syrup and then with whipped cream evenly. 

  • decorate with fruits on top of cake as per your choice of decoration

yogurt/curd rice

Very hearty, yummy meal that is very famous in south India..boiled rice is mixed with yogurt and tempered witn various spices..full of flavour, taste and aroma. Can be given to babies as well without nuts and chilli etc.


Ingredients :
1 cup boiled rice
3/4 cup yogurt
1/4 cup milk
salt acc to taste
1 tsp grated ginger
1 tbs chopped coriender
For tempering
1 tsp oil
1 tsp dhuli urad dal
8-10 curry leaves
1 green chilli finely chopped
1 tbs peanuts or cashew optional
pinch asfoedita( heeng)



Method:
In a bowl mix rice, yogurt, milk, salt, grated ginger.
now for tempering, take oil in a small pan. Once heated add musturd seeds, once done, add urad dal and nuts..cook util light brown. Now add green chilli, herng and curry leaves. Fry until release flavour. Add this tempering to yogurt-rice mix. 



Mix well and garnish with coriender
serve chilled with pickel. 


You can add chopped vegetables as well like cabbage, beans or spinach but I love this original flavour :)

Open Pizza sandwich


These crunchy cheesy sandwich are loaded with yummm fresh veggies and perfect for breakfast, brunch or dinner..loved by kids as well as adults 



Ingredints: for 4 sandwiches
8 slices of bread
Mozerella cheese grated
butter
Veggie toppings:
2 tsp oil
 1 onion chopped
1 small capsicum chopped
2-3 mushroom chopped
2 table spoon corn cooked
1 tomato deseeded and chopped
1 table spoon chilli sauce
1 tsp pizza sauce optional
salt acc to taste
1/2 Tbs black pepper
1/2 Tbs oregano
Process:
Preheat oven at 200C and toast bread untill light brown and crunchy on both side. This can be done in griller or pop up toaster as well
Veggie topping:
heat oil in a pan..add all veges except tomato..cook on medium flame untill tender..do not cover and keep stirring..you need little bit crunch in veggies. Add tomato, chilli sauce, pizza sauce, oregano, black pepper, stir well and adjust salt as per your taste. switch off the gas and let it cool


Sandwich:
spread butter on 2 slices of bread both sides. put few strands of cheese between bread slices..it'll stick the slices together.



spread veggie topping to top ofsandwich 


spread grated mozzarella cheese


bake in preheated oven at 200 C untill cheese start bubbling and little bit brown on top


cut in triangle shape and serve with tomato sauce :)
