Mixed lentil Dosa

Mixed lentil dosa: So healthy, crispy and absolute yummy, full of proteins, no rice, no flour, no fermentation required, can be made instantly after grinding, suitable for kids even toddlers..healthy breakfast and tiffin idea..I served it plain for breakfast, fill it with veggies to make a complete meal.


Ingredients:
1/4 cup moong dal (green/yellow)
1/4 cup Masoor dal
1/4 cup chana dal
1/4 Arhar dal
1/4 cup split peas
salt as per taste
oil.
Method:
Soak all lentils together preferably overnight or minimum 4 hours.
Strain and grind by adding little water to get dosa like consistency of paste.


Add salt and mix well.
Heat a skillet nicely i used non stick.
Take one serving spoon of batter and spread in crescent manner as thin as possible.


Drizzel few drops of oil and let it turn brownish between rings.

ease with the help of spatula and flip.


fold and Serve with coconut or tomato chutny.




Note:
Green chilli, heeng can be added while grinding the lentils for extra flavour.
You can add 2 tbs of besan/rice flour to batter for taste and texture but I did not use in this recepi.

wheat crackers


Wheat crackers: Butterless, Eggless, No Maida, No soda, Crispy baked, addictive wholewheat crackers. Guilt free snacking for people worried about calories but find it hard staying away from nibbling :D Just 3 basic ingredients needed to make these crisps :D



Ingredients
1 cup wholewheat flour 
3/4 tsp salt
11/2 tbs olive/cooking oil
cold water
pepper/chiili powder/dried herbs optional

Method;
Take Flour and salt in a bowl and add oil to it.
Mix well with fingers so that flour will resemble bread crumbs.
Add chilli/ pepper powder or dried herbs if using.
Knead with the help of cold water smooth but tight dough.


leave for 10 mins in the meantime preheat the oven at 400F or 200C.
Devide dough in 3 portions, roll out as thin as you can and make fork marks to avoid them puffing up.



Sprinke with little bit salt, red chilli or herbs
Cut in desired shape and arrange on a greased baking tray.


bake for about 7-8 mins until corner start turning brown.
take out from oven and let them cool completely.

serve with desired dips.

Nachos with dips



Nachos:
Ingredients:
1 cups yellow cornflour
2 tbs plain flour
2 tbsp. oil 
Lukewarm water 
Oil for deep frying
Oregano, salt and red chilli flakes 
Method:
Mix cornflour and plain flour, add salt as per taste , mix oregano and red chilli flakes , make a well in centre add oil and mix the flour then add the water and knead it to a soft dough.
After 1/2 hr roll out the dough in a circle  and cut triangles . prick it with fork so that it doesn’t puffs up.
Heat oil in a pan , and fry the triangles on a medium flame and cool it completely before serving
refried beans

Ingredients:
1 cup red kidney beans boiled
1 large Onion finely chopped
1 tsp ginger garlic paste
1 green chilli finely chopped 
2 tbsp oil
2 tbs tomato sauce 
Salt as per taste
Method:
Mash cooked rajma coarsely .
Heat oil in a pan add the ginger garlic paste and fry for 1 min.. then add onions and cook it until soft 
Add the rajma and cook it for 5-6 mins, then add tomato sauce and salt.
Salsa


ingredients: 
1 large tomato grilled, peeled and very finely chopped
1/4 capsicum finely chopped
1 large onion finely chopped
Tomato chilli sauce 2tbs
salt and pepper as per taste
Lemon juice 1 tsp
Method:
Mix all the ingredients in a large bowl and put it in a refrigerator
Sour Cream dip

Ingredients:
1 cup hung curd 
Finely chopped chilli and ginger
1/4 tsp red chilli flakes
1/4 tsp oregano
1/4 tsp of sugar
1/4 tsp tomato chilli sauce
Salt as per taste
Method:
Mix all the above ingredients and refrigerate
Cheese dip

Mix 1 cup grated cheese with 1/3 cup milk and microwave for 1 min. Mix well and Your cheese sauce is ready

Put nachos in a microwave safe plate and pour cheese sauce and grated cheese on top of it . Microwave for 10 sec or until cheese melts.
Serve the nachos with all the dip. or serve as shown in pic.

Masala vadai

I'm Masala Vada: One more delicacy from South..Made of Chana dal, fennel seeds, mint, ginger, garlic..one of the most famous and yummiest street food.. served with coconut or tomato chutney..

Ingredients:
1 cup chana dal soaked for at least 3 hours in warm water.
1 onion finely chopped
2-3 green chilli
1 tbs chopped mint leaves
1 spring curry leaves
2 tsp fennel seeds
3-4 garlic cloves 
1 small piece ginger
salt as per taste
oil to fry

Method:
Drain Chana dal completely and grind to a coarse mixture without adding water with fennel seeds, green chilli, garlic and Ginger.

Do make paste there should be few whole chana dal.


Add chopped mint leaves and curry leaves.


Add onion and salt just before frying as mixture will becomes watery if you will it after adding onion.
Heat oil in a deep pan.
Take a lemon size mixture in your hands and roll it, then press it slightly flat as cutlets. Repeat the process with remaining batter.

Fry on medium flame untill golden brown.
serve hot with coconut or tomato chutney.

Orange Cake

Whole Orange Cake: Beautifully baked tea cake with thin layer of Orange icing..soft, moist, scrumptious and melt in mouth. Smell of orange filled whole house with divine smell while baking this cake :)
moreover it's an easy one pot , can't go wrong recepi


Ingredients

  • 125 gms butter melted and cooled
  • 1/4 cup milk
  • 1/4 cups peeled deseeded and pureed orange or you can use orange juice
  • 2 egg see note at the end for eggless rcp
  • 3/4 cups caster sugar 
  • 1 1/2 cups self-raising flour or (same amount plain flour+3 tsp baking powder)
  • 1 tbs orange rind zested 

Orange Icing 

  • 1/2 cups butter softened 
  • 1 cups icing sugar sifted 
  • 2 tbs orange juice to taste 
  • 1/2 tsp orange rind zested
  • sliced orange for garnishing optional
Method
Preheat oven at 180 C and grease a loaf tin.
Take melted butter,orange rind, pureed orange, sugar, milk and eggs in a bowl and whip for 2 mins.
fold in flour and mix well and again whip for 3 mins.
Pour batter in prepared loaf tin bake for 35-40 mins or until toothpick comes out clean.
take out cake and cool on wire rack until completely cooled.
This can be served at this stage if you do not prefer to have icing.


For icing mix all ingredients for icing and spread on cooled cake. Garnish with orange slices and serve.

Note:
For eggless version of same recepi instead of eggs use 1 Tbs corn flour added in 1/4 cup of milk and 1/4 tsp of  baking soda.

how to make Paneer at home

Paneers is an inseparable part of royal indian cuisine but these days you can't guarantee purity and freshness of Paneer and that can spoil your dish as well as your health. This is the reason I prefer to make paneer at home and process to very simple.

Procedure:
Boil Milk and leave for 1 minute after switching off the gas.


Add 1 Tbs of vinegar and keep stirring in one direction if milk does not curdle fully in 10 sec add 1 Tbs and stir, keep repeating until milk and whey seprates fully. It took 3 tbs of vinegar for curdling 2 lts of full cream milk.



Sieve through a thin cotton or muslin cloth.


Wash paneer with clean water once to remove taste of vinegar.



fold cheese cloth and squeeze extra water.



Flat the paneer in desired thickness and fold in muslin cloth again


Place a heavy weight on paneer, I generally fill my 5 liter cooker and place on it.


It will remove excess water and join paneer together. Take out paneer block in 20-25 mins,


Wrap in cling wrap and keep in fridge for an hour or until use.


Tske out 15-20 mins before use and cut in desired shape.


Soak in hot water for 10 mins.

Matar Paneer

Matar Paneer is one of the most famous curry in nothern parts of Indian. All wedding and restaurent menus are incomplete without Matar Paneer. so today I am sharing a bit healthier version of matar paneer without using cream or butter


Ingredients:
1 cup Peas
1 cup paneer cubes
1/4 cup cashew whole soaked in water for 15-20 mins
2 small green cardomoms
1 tsp cumin seeds
2 Tbs oil
2 onions roughly chopped
2 tomatoes roughly chopped  
1 tsp ginger garlic paste 
1/2 tsp turmeric powder
1 tsp coriender powder
1/2 tsp chilli powder
1/4 cup milk
salt as per taste
1 tsp sugar
1/2 tsp garam masala
1/2 tsp kasturi methi
Method:
Heat one tbs of oil in a pan and add cumin seeds. once brown, add chopped onion on sim but do not let them turn brown. Add chopped tomatoes, cordomom and soaked cashew. 


cover till tender and cooked. switch off the gas and let it cool completely.


Grind the mixture to a smooth paste and keep aside.



In the meantime boil peas till tender switch off the gas and soak paneer cubes in hot water until use.



Heat one 1 tbs of oil in a heavy bottomed pan.
Add ginger garlic paste and fry for few seconds.
Add onion tomato paste and cook until start leaving sides of pan.


Add turmeric powder, coriender powder, red chilli powder and salt. Mix well and cook more for a minute.

Add peas and paneer cubes mix well and add milk.


adjust the salt and water consistency. Add sugar, garam massla and kasturi methi and boil for 2-4 mins.


switch off the gas, Garnish with coriender leaves. 



serve hot with rotis, naan or rice.
