Mango Cheesecake

Here is yummiest finger lucking Baked Mango Cheesecake..There are many type of cheesecakes but my favourites are baked ones..baked cheesecakes have such rich flavors..that you cant't have enough of it.


Ingredients:
  • 250g packet plain sweet biscuits
  • 125g melted butter
  • 500g softened cream cheese
  • 2 eggs
  • 1/4 cup lime juice
  • 2 mangoes chopped
  • 1 mango for garnishing
  • 1/2 cup caster sugar
Method:
  • Process plain sweet biscuits in a food processor until fine crumbs...add 125g melted butter and press into base of a cake tin. Chill for 1/2 an hour. Process softened cream cheese, 1/2 cup caster sugar, 2 eggs and 1/4 cup lime juice until peak formed. Fold through chopped mango and pour over base. Bake at 160°C for 40 minutes until just set. Cool for 30 minutes then refrigerate overnight. Your yummi yummi cheese cake is ready. Garnish with mango slices.



Pull apart Garlic Bread

Smell of fresh Garlic bread seems heavenly in any weather and at any time of day. These garlic breads are very soft very presentable and are super yum.




Ingredients:
All purpose flour: 2 cups + 1Tbs
Salt 1/2 teaspoon
Sugar 1 Tbs
1/4 cup milk+1/4 cup water, lukewarm
Dried yeast 2 tsp or 1 sachet(7 grams)
2 table spoon vegetable oil.
.
For Garlic filling

2 Tbs olive oil
2 tsp garlic paste
1/2 tsp pepper powder
1/4 tsp salt
1/2 tsp oregano.
1/4 tsp chilli flakes

Method: Mix milk and water mixture with sugar, stir in yeast and leave at room temperature for about 10 minutes or until frothy. Mix all the ingredients for garlic filling and leave at room temperature so that oil will infuse with flavours.
Sift flour and salt together. Make a well in middle and add froathy yeast mixture and olive oil. Now mix gently first, when all the mixture form a mass knead well for 7-8 minutes until you get a very smooth and elastic dough.
leave dough covered with cling wrap or kitchen towel until double in size approximate 1 hour.
Once done take dough punch all the air out and knead for a minute.
 Now devide the dough in 6 equal parts.
Take 2 parts and roll like long chapatti.
divide garlic mixture in three equal parts.
fill one part of garlic mixture between 2 rolled chapaties as shown in pic below:

Make a roll as shown in picture.



Cut the roll.



Arrange the corner ones in middle and large ones around in a circle.



leave covered for 45 minutes more for second rising.



preheat oven at 180C for 15 minutes.
Give milk wash to the bread sprinkle sesame seeds.
Bake for about 15-18 mins or until brown on top.


serve hot with soup.



 

Garden vegetable soup

A great comforter and healthiest choice of food in any season.



Ingredients :
 1 tablespoon butter
2 Tablespoon corn flour
2 tablespoon soy sauce (medium)
5 cup + 2 table soon water
1/2 cup very finely chopped vegetable( carrots, beans, cauliflower)
1/2 cup green peas and corns.
1 onion finely chopped
1/2 cup spring onion
1 teaspoon Pepper powder
Salt according to taste



Method: Wash all vegetables in cold water. Take a deep pan and boil all chopped vegeis, peas and corn in 5 cups of water for 10 mins or until veggeis are tender. Filter and reserve the veggies and stock separately. Mix extra 2 tablespoon of water with corn flour and keep aside. Now take a heavy bottomed pan and add butter and chopped onion. Saute till very light brown. Add corn flour mixture, soy sauce, pepper powder and cook until thick. Add vegetable stock and boil for 5 minutes. add boiled vegetable and boil for more 5-7 mins. add salt according to your taste. Garnish with spring onion. Serve with Veg fried rice, Garlic bread, Pasta or as it is.

Veg Fried Rice

Healthy and yummi..loaded with lottttssss of vegetables and having nice fragrance of soy sauce..truly something you can enjoy any time of the day



Ingredients:
1tbs oil
1 cup Rice
1 cup carrot cut in strips
1cup beans finely chopped
1 cup cabbage finely chopped
1 cup onion finely chopped
1 tsp garlic paste
1 tbs chilli sauce
1 tbs soy sauce
salt to taste
1 cup spring onion finely chopped

Mehod:

1. Boil and cool rice will be better if you boil rice 2 hrs in prior and leave in fridge for chilling.
2. Take oil in a deep heavy bottomed pan, non stick works best here. Add chopped onion and fry till light brown
3 add garlic paste and sauté for more 30 seconds
4. add all vegetables except spring onion and keep cook while keep stirring continuously on medium high flame until corners of veggies shows some brown color.
5. add spring onion chilli sauce, soy sauce and salt. Stir well
6. add cold rice and mix in well all rice grains should be well coated with sauce.
7. garnish with spring onion while serving.


 

Kadahi Paneer


Ingredients:

250 gms Paneer (cottage cheese), cut into 1-inch cubes
2 tablespoons Dry Coriander Seeds
2 Dry Red Kashmiri Chillies

1 Green Cardamom
a small piece cinnamon
2 medium Capsicums, chopped into 1-inch pieces
3 medium Tomatoes, finely chopped
2 medium Onions, finely chopped
1 tablespoon Ginger-Garlic Paste
1/2 teaspoon Red Chili Powder
2 tablespoons Tomato Puree, optional
2 teaspoons Dry Fenugreek Leaves (kasuri methi)
3 tablespoons Cooking Oil or Ghee (clarified butter)
2 tablespoons Fresh Cream, optional
1/3 cup Water
Salt, to taste




Method:

first dry roast the coriander, cardamom, cinnamon and dry kashmiri red chilies in a pan on a low flame til 1 min and cool n grind them..
in a pan heat oil or ghee. then add the ginger garlic paste and saute till their raw aroma gone.
add onion, saute well, add tomatoes and cook until tender, crush properly, when it leaves oil add prepared powder and tomato puree..cook again until oil separates.
add capsicum and 1/4 cup water..cook until capsicums are done..mix well add paneer pieces and Kasturi methi.. boil..add cream at end give 1 boil and your kadai paneer is ready..

Honey Chilli Soy Potato

Crispy, Spicy Yummy, a real treat for your taste buds...Don't bother about weighing scale just dig yourself in these deep fried crispy potato wedges dipped in honey and soy based sauce






Ingredients

For the potatoes:

2 potatoes, peeled and sliced
3-4 Tbsp cornflour or maida
Salt, to taste
1 tsp red chilli powder
Oil, for deep frying

For the base:
1 tsp oil
1 Tbsp garlic paste
2 spring onion
3 tsp white sesame seeds
2 Tbsp honey
Salt, to taste
1/4 tsp soya sauce
2 tsp chilli sauce




Method

For the potatoes:
In a bowl add cornflour or maida, salt and red chilli powder.
Add the sliced potatoes. Mix well till potatoes are coated. Deep fry till golden.
Keep aside..

Sauce:
In a wok add oil, garlic paste, spring onions. Sauté on high heat for 1 minute.
Add honey, salt, soya sauce, chilli sauce. Sauté for 30 seconds. 
Add deep fried potatoes and sesame seeds. Mix.
Ready to serve

 

Gravy Veg Manchurian

This is a very popular indo-chinese dish and very easy to make. While eating these fried vege balls dipped in yummy gravy then you do not think much about weight n all.. pure enjoyable dish served with steamed or fried rice.

Ingredients

 Veg Balls

2 cups finely chopped cabbage
1 1/4 cups carrot , grated
1 cup chopped onions
4 tbsp cornflour
2 tbsp plain flour (maida)
1 tbsp finely chopped garlic (lehsun)
2 tsp finely chopped green chillies
1 tbs soy sauce
 salt and to taste
oil for deep-frying
 
For The Sauce
 
1 tbsp garlic paste
2 tsp finely chopped green chillies
2 tsp finely chopped ginger
1/2 cup very finely chopped onion
1 cup water
1 tbsp soy sauce
1tsp Chilli sauce
1 tsp tomato sauce
1 tbsp cornflour mixed with 1 cup
of water
2 tbsp oil
salt to taste
 
1/4 cup spring onion for garnishing
 
 
 
 
 
 


Method
For the vegetable balls
 
  1. Steam the grated carrots and cabbages for 5-7 mins, just lightly soft
  2. Combine the steamed cabbage, carrots, very finely chopped onions, cornflour, plain flour, garlic, green chilli, salt and pepper in a bowl and mix well using your hands.
  3. Take one tbs of the mixture and roll into small balls.
  4. Deep fry a few balls at a time in hot oil until golden brown. Drain on absorbent paper and keep aside.
For the sauce
 
  1. Heat the oil in a wok or frying pan on a high flame. Add the garlic paste, green chillies and ginger and stir fry over a high flame for a few seconds.
  2. Add chopped onion and fry till light golden brown.
  3. Add soya sauce, cornflour paste, chilli sauce, tomato sauce and salt and simmer for a few minutes.
  4. Add water and cook for one boil
  5. Add vegetable balls and let it cook covered on sim for 5 mins.
  6. switch off the gas and garnish with finely chopped spring onions at te time of serving.

Wholewheat Marble Cake

We Indian love everything colourful..so as food.. I have tried so many versions of pattern cakes, zebra cakes. Then I thought to experiment something that is more colourful as well as healthy and
came up with this cute colourful and healthy cake. This is sure a hit with kids and as a party dessert.




Ingredients:
Butter 250gm
Vanilla extract: 1tsp
Strawberry flavour: 2tsp
11/4 cup castor sugar
3 eggs
2 1/4 cup wholewheat flour
4 tsp baking powder
3/4 cup milk
pink food color
2 tbs cocoa powder
2tbs milk extra
(chocolate Ganache)
200 gm dark chocolate
200 gm heavy or whipping cream
3tbs coarsely grounded pistachios




1. Preheat oven to 180 C and grease a deep round cake Pan
2.Beat butter, vanilla extract and sugar in a medium bowl until very light and froathy. Now add eggs one by one beating vigorously. Sift flour baking soda and baking powder together. Now add flour mix and milk to the egg mix an stir until well combined.
3. Divide mixture into three bowls. add pink color and strawberry flavour to one bowl, cocoa powder and extra milk to another bowl and leave one bowl plain. Now you have 3 bowls of cake mix brown, pink and cream.
4. drop alternate spoonful of mixtures in cake pan, plain, pink and yellow repeating until all mixture is consumed. pull a skewer backward and forward through the cake to create marble effect.
5. Bake the cake for one hour or until a skewer come out plain. stand in pan for 5 mins, turn onto a wire rack to cool.

Choclate Ganache:
Heat cream in a heavy bottomed pan until just start to boil. Add chopped chocolate to it and stir until chocolate melts. leave to cool on room temperature.
when cake is completely cooled spread chocolate ganache on top and garnish with grounded pistachios.
