Fried potato subji

Fried potatoes cooked in no onion no garlic tomato and yogurt based gravy.


Ingredients:
5-6 potaoes boiled and chopped in large pieces. 
Deep fry or shallow fry potatoes as per your choice, I deep fried them
For powder:
1/4 cup cashew
1 tsp cumin seeds
1 tbs coriender seeds
5-6 clove
2 cardimom pods
1 small piece cinnamon
2 dried red chillies
grind all ingredients to a fine powder.


For gravy:
2 tbs oil
1 tsp cumin seeds
2-3 tomatoes pureed
1 tsp ginger paste
1/4 cup yogurt
1 tsp kasturi methi
1/4 cup milk
1/2 tsp turmeric powder
salt as per taste
Method:
In a deep pan heat 2 tbs of oil. Add cumin seeds and fry till golden brown. Add turmeric powder and prepared spice powder, fry for 30 seconds.
Add ginger paste cook for a minute and add tomato puree. Cook until thick. add yogurt and cook again until oil seprates.
add fried potato, mix well and add 1/4 cup milk. add salt as per your taste. add kasturi Methi and mix well.
Add some water but dont make it too watery. boil for 3-4 minutes untill spices infuse well with potatoes.
Switch off gas and Garnish with coriender leaves.
serve hot with poories, chapaties or rice
